摘 要:蘋(píng)果酸是一種安全、無(wú)毒、無(wú)害的天然活性物質(zhì)。介紹了蘋(píng)果酸的生理功能,綜述了蘋(píng)果酸在食品領(lǐng)域中的應用研究進(jìn)展。主要從蘋(píng)果酸淀粉酯、pH調節劑、果蔬防腐劑、花青苷含量促進(jìn)劑、藥食兩用作物提取溶劑、鈣營(yíng)養添加劑等方面報道了蘋(píng)果酸的應用實(shí)例,并展望了其發(fā)展前景,旨在為今后食品工業(yè)中蘋(píng)果酸高附加值產(chǎn)品的開(kāi)發(fā)與設計提供參考。 |

Research Progress on Physiological Function of Malic Acid and Its Application in Food Industry |

Abstract:Malic acid is a safe, non-toxic and harmless natural active substance. The physiological functions of malic acid are introduced, and the application and research progress of malic acid in food field are reviewed. This paper mainly reports the novel application examples of malic acid from the aspects of starch ester of malic acid, pH regulator, fruit and vegetable preservative, anthocyanin content accelerator, extraction solvent for medicinal and edible crops, calcium nutritional additive and so on, and looks forward to its development prospect. The purpose is to provide reference for the development and design of malic acid high value-added products in food industry in the future. |
